The Balik® Smokery in the Swiss Alps shook the world in 1978, when it introduced its fillet of smoked salmon (Fillet Tsar Nicolaj). By resurrecting the tradition of a 150 year-old Imperial Russian recipe, it revolutionized the preparation and consumption of salmon.
